Ingredients:

- three medium beets,
- one tablespoon and plus another teaspoon of vegetable oil,
- three clementines,
- one teaspoon of lemon juice,
- salt to taste,
- a quarter of a teaspoon of dry mustard,
- mint for garnish,
- low fat yogurt.

Cooking:

Preheat the oven to 235C. Wash and dry the beets. Lay out on a sheet of foil. Sprinkle with one teaspoon of vegetable oil. Cover with foil, place a bag of beets on a baking sheet and cook until the vegetable is soft. After 30 minutes with a fork, check the beets are ready. Ingredients:

- 5 clementines,
- 5 Meyer lemons,
- one cup of sugar.

Cooking:

Grate zest with three lemons and clementines. Mix a cup of water with a cup of sugar. Bring to a boil. Reduce the heat to small and add three quarters of the zest. And cook for 15 minutes until thickened. Cool and remove the zest from the syrup as much as possible.
